The name “crudaiola” comes from the Italian word crudo, meaning “raw.” At Peperoncino, we prepare it with homemade Istrian fuži noodles, fresh cherry tomatoes, and peppery arugula.
For extra flavor, sprinkle with a teaspoon of grated cheese or add a splash of balsamic vinegar if you like.
